Refreshments are always enjoyed during the time of fellowship after a World Day of Prayer service. These lime cookies will bring some “island sunshine” to your home and churches.
Lime Cookies
1 cup soft, healthy margarine
1½ cups sugar
lime zest from one lime
lime juice from one lime (approximately 2 Tablespoons)
2 eggs
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
Preheat oven to 350 degrees F.
Cream together margarine, sugar, lime zest, lime juice and eggs.
In a second bowl, stir together flour, baking powder, baking soda and salt. Blend flour mixture into margarine-sugar mixture.
Drop by the spoonful (approximately 1½ Tablespoons) onto greased cookie sheets.
Shape into circles with your fingers. Bake for 10 minutes or until just starting to brown a little on the edges. Remove from cookie sheets and cool on cookie racks.
Yield: 42 cookies
